Tomatoes filled with tofu


4 big tomatoes
1 medium onion
2 Tbs fresh garden herbs
2 Tbs vegetable oil
2 Tbs bread-crumbs
250 g firm tofu
1 clove garlic

Servings: 4

Recipe directions

Top the unpealed tomatoes, remove the juice and pips.

Bake the chopped onions and squeezed garlic in the oil until soft.

Beat the eggs and pour them on top of the onions and garlic. Cook for about 1 min.

Mash the tofu and mix it with the egg mixture, bread-crumbs and fresh garden herbs. Add salt and pepper. Fill the tomatoes with this mixture.

Finally place the filled tomatoes on a greased plate and bake in over at 180°C for 15 min.
