Belgian waffles


600 ml soy milk
1 tablespoon dried bakers yeast
4 eggs, separated in yolks and whites
200 g wheat flour
2 tablespoon white sugar
1/2 teaspoon salt
1 teaspoon vanille extract
100 ml melted margarine or vegetable oil

Belgian waffles are know worldwide and there are many types (Belgian Waffles, Brussels Waffels an Waffles from Liege).

Warm soy milk tot 30-35°C and dissolve the bakers yeast. Add the egg yolks, the wheat flour, sugar, vanilla extract and salt in the soymilk. Stir in the melted margarine or vegetable oil. Set this batter in a warm place (30 - 35 °C) for 30 minutes until the batter has doubled in volume.

In a seperate bowl beat the egg whites until stiff. Gently fold the egg whites into the waffle batter.

Oil and preheat the waffle iron. Bake about 80 ml of batter at a time in the hot waffle iron.

Serve the Belgian Waffels hot.
