Creamy tomato soup

Ingredients

1 onion, diced
1 clove garlic, chopped
2 Tsp vegetable oil
1 large ripe tomato, diced
1 tsp fresh basil, chopped
200 ml soy milk
200 g silken tofu

Servings: 4



Recipe directions

Cook onion and garlic in sauce pan in oil until soft and transparent. Add tomato, basil, soy milk. Cook, stirring constantly, for 2 minutes. Remove from heat. Transfer to food processor, add tofu and puree until smooth. Add salt and pepper to taste.

Serve the creamy tomato soup hot.
