Broccoli soup

Ingredients

1 medium onion, chopped
2 tablespoon soybean oil
1 liter water
4 stalks broccoli, cut in bits
200 ml plain soy milk
75 g wheat flour
  salt and pepper to taste

Recipe directions

Fry the onion in the soybean oil a few minutes, until soft and translucent. Add the broccoli and water and bring to boil. Continu to boil on medium heat for 10 minutes. Dissolve the wheat flour in the soy milk, by adding the soy milk slowly to the flour. Mix until the mixture is smooth and free of lumps. Stir this mixture in the soup. Bring the soup to boiling point, stirring constantly, and continue to boil for a few minutes until the broccoli is soft. Bring to taste with salt and pepper.

Serve the broccoli soup while the soup is still hot.

Broccoli belongs to the cabbage family. Broccoli consists of green flower heads arranged in a tree-like fashion on branches sprouting from an edible stalk. The broccoli flower heads is surrounded by leaves.
The word 'broccoli' is derived from the Italian word 'brocco' meaning arm branch.
Broccoli contains following nutrients per 100 g: 2.8 g proteins, 2,6 g fiber, 47 mg calcium, 89 mg vitamin C and 0,383 mg beta carotene. Broccoli contains phytochemicals which have anti-cancer effects. By including broccoli in your diet you can reduce or prevent diseases like cancer, diabetes, osteoporosis and heart disease.
