Gluten free bread


100 g soy meal
400 g rice meal
200 g buckwheat
200 g corn starch
1 tsp salt
1 Tbs dried yeast
1 tsp xanthan gum
900 ml water

Recipe directions

Mix all the dry ingredients very well. It's important that the xanthan gum is well distributed. Add the water and mix with wooden spoon until mixture is smooth. The dough of the gluten free bread is more liquid than normal dough.

Cover dough with moist towel and let it rise in a warm place during 30 min. Mix the dough again.

Put dough in oiled forms. The size should be such that the dough will fill them halve. Let it rise during 20 min. Put in pre-heated oven at 200°C when the middle of the dough is reaching the height sides of the form. Bake during 60 min.

Take the gluten free bread out of the form and let it cool down.

This gluten free bread can be eaten by people with celiac disease (gluten intollerance).
