2 mango, peeled, pitted, diced
150 ml soy milk
250 ml plain soy yogurt
2 tablespoons lemon juice
3 tablespoon sugar
1 teaspoon vanilla extract
Recipe directionsTry to buy mango without fibers. Place the mango pieces for a few hours in the freezer.
In a blender combine the frozen mangoes, soy yogurt, soy milk, lemon juice, sugar and vanilla extract. Blend until very smooth.
Pour the Mango Smoothie into chilled glasses and serve immediately.
Mango factsThe mango is the king of the tropical fruits. Mangoes are cheap and abundant in tropical countries but they are very expensive in countries where they need to be imported. There are more than 1000 mango varieties.
When the mango is ripe, the flesh is soft and very juicy. Eating a mango can be a fairly messy business. The taste is very fruity and sweet, somewhat like a mix of peach and pineapple.
Mangoes are very nutritional. Fresh mango contains per 100 g: 1.7 g fibers, 190 mg potassium, 37 mg vitamin C and 1.25 mg beta-carotene.
