Sensorial evaluation
This soy cheese is promoted for its super meting property. Therefore, we tested that first. Compared with other soy cheeses on the market, this cheese melts nicely without drying out, almost like cow's cheese. The taste is nice too, although a bit week. Mouthfeel is also better than the standard Edam soy cheese: a lot less starchy. The improved melting properties are the result of higher protein and fat content, and less starch.
