Protein bar with chocolate chips
75 g soy protein
100 g wheat flour
250 g rolled oats
1/2 teaspoon salt
1/2 teaspoon cinnamon
100 g brown sugar
150 g chocolate chips (or grated chocolate)
300 g silken tofu
1 teaspoon vanilla extract
50 g vegetable oil
Recipe directionsCombine the soy protein, wheat flour, rolled oats, brown sugar, salt and cinnamon. Mix together and stir in the chocolate.
In a separate bowl mix the silken tofu, vanilla extract and the vegetable oil. Add this mixture to the dry mixture and knead with your hands to form a dough.
Place the dough on a greased baking plate and press flat with your hands to a thickness of about 5-6 cm. Bake in an preheated oven at 350°F (180°C) for 15 minutes. Remove from the oven and cut rectangular protein bars with a knife. Place the protein bars back on the baking plate and continue to bake for 20 minutes.
Remove the chocolate protein bars from the oven and allow to cool on a rack. Store the protein bars in an airtight container or plastic bag.
