Chicoree soupIngredients2 tablespoon vegetable oil
2 onions, chopped 500 g chicoree, cut in small pieces 1 tablespoon white miso 1 liter vegetable stock 400 ml soy milk salt and pepper to taste Servings: 8 Recipe directionsIn a soup pot bake the onion in the vegetable oil for a few minutes, until the onion is soft but not brown. Add the vegetabe stock and chicoree and bring to boiling point. Continue to boil on low heat for 15 minutes or until the chicoree is soft. Add the soymilk and miso. Bring to taste with salt and pepper. Heat the soup a bit without boiling it.Serve the chicoree soup hot. |
