Blueberry pancakes

Ingredients

200 g all-purpose flour
2 tablespoon sugar
1/2 teaspoon salt
2 teaspoon baking powder
2 eggs, beaten
2 tablespoon soybean oil
300 ml soy milk
100 g fresh blueberries

Servings: 4



Recipe directions

Mix the flour, salt, sugar and baking powder.

Add to this mixture the soymilk, eggs and soybean oil. Mix until smooth batter. Finally add gently the blueberries.

Pour enough batter into a greased skillet to cover the bottom. Flip the pancakes when bubbles appear on the top. Bake the other side of the pancake until golden.

Serve the blueberry pancakes hot with maple or blueberry syrup.
