Mashed potatoes with miso

Ingredients

4 medium boiling potatoes
50 ml soy milk
  salt and pepper to taste
1 tablespoon kudzu powder
2 teaspoon miso
1 clove garlic, minced
1 onion, minced

Servings: 4



Recipe directions

Boil potatoes in water until tender (20-30 minutes). Drain and puree the potatoes. Add the soymilk and bring to taste with salt and pepper.

Mix the kudzu powder with 100 ml and add the miso. Mix until smooth.

Heat oil in skillet and sauté onions and garlic until lightly browned and translucent. On medium heat add the kudzu solution and stir until thickened. Pour over mashed potatoes.

Serve the mashed potatoes with miso immediately.
